Why pitas make easy kid friendly meals…

The middle eastern flatbread, or “pocket” bread dates back to 4000 B.C.  Whole wheat pitas have a great flavor, very low in saturated fat, no cholesterol, low in sugar and high in dietary fiber. They are a great alternative to bread and are very inexpensive. Ezekiel makes a great pita. Here you can see there list of ingredients:

The best part of using pitas?  They make easy kid friendly meals. Here is a list of a few ways I like to use them:

  • Quick Pizzaspitas 045Pizza Sauce:
1 can of Italian stewed tomatoes, (drained)
Fresh basil (I use dried if I don’t have fresh on hand)
Sea salt and pepper to taste
    1 garlic clove minced
    Teaspoon of olive oil

Blend in blender until smooth.

Add toppings (fresh tomatoes, basil and mozzarella cheese shown here) and broil in oven for 5 minutes or until toppings are hot.

  • Peanut Butter and Jelly Sandwiches

My kids tire of the same old bread.  It’s nice to change things up in their lunchbox!

  • Egg Salad Sandwiches

6 hard-boiled eggs
1/8-1/4 cup of Mayonnaise (to taste)
Sea Salt and Pepper (to taste)
Whole Wheat Pitas (shown with mini pitas from Sprouts)

Cut eggs into small pieces using a egg slicer or pastry cutter.  Add mayonnaise, sea salt and pepper.  Cut pitas in half, add egg mixture.  Easy peasy!  (My kids love this served warm!) Makes four servings.

Pitas also can be cut into wedges and dipped in Hummus!  Yum!  Or warmed up with coconut oil, honey, and sliced almonds.  How many ways can you use a pita?
