Whole Wheat Pizza Dough

1 cup warm water
1 package or 2-1/4 teaspoons yeast
2-1/4 cups organic whole wheat flour + 1 tablespoon
1-1/2 tablespoons of organic honey
1/2 teaspoon of sea salt
3/4 tablespoon organic olive oil

Preheat oven to 500 degrees

In a large bowl or electric (stand) mixer, combine warm water, yeast, and 1/2 tablespoon of flour. Sprinkle ½ tablespoon of flour over mixture.  Wait until the flour is completely absorbed then add honey, salt, and olive oil.  Add the 2-¼ cups flour and knead the dough by hand, 7-10 minutes or in a mixer with a dough hook for 6 minutes. Do not allow the dough to get too stiff. Dough should be sticky.

Brush pan with olive oil.  Roll out dough on to the pan or surface covered with flour.  Prick dough with a fork and bake in the oven for 5 minutes.  For a thicker crust, allow dough to rise, covered for 15-20 minutes. Remove crust from oven and top with your favorite toppings.  Bake an additional 5 minutes or until toppings are hot.

Pizza Sauce:
1 can of organic Italian stewed tomatoes (drained)
2-3 leaves fresh organic basil (I use dried if I don’t have fresh on hand)
Sea salt and pepper to taste
1 organic garlic clove, minced
1 teaspoon of organic olive oil

Blend in blender until smooth.
