Vegan Peanut Butter & Chocolate Chip Cookies

Over the years I have experimented with different versions of this recipe and they have never quite turned out right! But this one is money! So easy, minimal ingredients, and the taste… AMAZING!!!

Organic coconut oil (for greasing the baking sheet)
2 tablespoons organic ground flaxseed
3 tablespoons filtered water
1 cup organic peanut butter
1 ¼ cup organic coconut sugar
¼ teaspoon sea salt
2 teaspoons vanilla
½ cup organic chocolate or cacao chips

Preheat oven to 350 degrees. Using a paper towel, grease a baking sheet with coconut oil. In a small bowl, combine the ground flaxseed and water. Let sit for 5 minutes then whisk until it reaches an egg like consistency. In a large bowl, combine the remaining ingredients, including the flaxseed. Add more water or flaxseed if needed, until it resembles play dough. Use a small cookie scoop to form balls and place on the baking sheet. Press flat with a fork and bake in the oven for 10-12 minutes. Serve with almond or coconut ice cream or your favorite nut milk!
