These vegan muffins are so DELISH, especially warm right out of the oven! Perfect for your Sunday morning brunch!
3/4 cup organic spelt flour
1/3 cup organic cacao powder
1/2 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon sea salt
1 cup organic unsweetened applesauce
1 teaspoon organic coconut oil, melted
1/2 cup organic 100% maple syrup or raw honey
1 teaspoon organic vanilla
1/2 cup organic cacao chocolate chips
Preheat oven to 350 degrees. Line a muffin tin with paper muffin cups. In a medium sized bowl combine the dry ingredients. Add the wet ingredients and mix until well incorporated. Spoon batter into muffin cups filling ¾ way full. Bake for 22-25 minutes. Makes 10 muffins. Enjoy!
