Like I needed another excuse to break out the spiralizer!
4 organic zucchinis, spiralized
1 organic red pepper, chopped
1 lb organic heirloom (or reg) cherry tomatoes, sliced in half
1 cup organic fresh or frozen (I used Whole Foods fire roasted frozen corn-so yummy!)
1/4 cup organic radishes, sliced and chopped
1/2 organic cucumber, sliced and chopped
vegan buttermilk dressing here
Mix and serve cold! With or without dressing it’s the perfect combo of veggies!
