Strawberry Apricot Popsicle


A generous neighbor gave us apricots from his tree and in an effort to use them before they went bad, we threw together this easy summer treat!

2-1/2 cups organic fresh apricots, seeds removed
2 cups organic fresh strawberries
1/4 cup organic almond milk
1 tablespoon organic raw honey
Popsicle molds

Using a Vitamix or high speed blender, pulse the apricots until smooth and resemble a nectar.  Pour into a bowl and set aside.  Again, using the blender, pulse the strawberries, almond milk and honey until smooth.  Alternate pouring the different layers in the popsicle molds or pour in half of each mixture and swirl with a knife. Freeze overnight for best results.  Makes six popsicles.  Enjoy!
