Southwest Rice & Bean Soup

1 T olive oil
1 cup chopped onion
2 garlic cloves, minced
4 cups vegetable broth
2 cups water
2 cups cooked brown rice
1 t cumin
1 (16 oz) can Great Northern Beans, rinsed and drained
½ cup chopped cilantro
Salt and pepper to taste
2 medium tomatoes diced
1 avocado diced
2 limes (juice)

In a large pan, sauté onion and garlic in olive oil over medium-high heat for 3 minutes. Add broth, water, rice, cumin, and beans; bring to a boil. Reduce heat, and simmer for 10 minutes. Remove pan from heat; add cilantro, salt, pepper, tomatoes, avocado and lime juice. Serve with warm tortillas or chips.
