Pumpkin French Toast


3 eggs
¾ cup almond milk
½ cup pumpkin puree
1 tbsp honey
1 tsp vanilla
1 tsp cinnamon
1 tsp pumpkin pie spice
10 slices of bread (I use Ezekiel bread)
Coconut oil (or non stick spray)
100 % Maple syrup
*when possible, use organic ingredients

Preheat griddle or pan.  In a shallow dish, whisk together eggs, almond milk, pumpkin, honey, vanilla, cinnamon and pumpkin pie spice.
Dip both sides of bread into the egg mixture, allowing bread to soak for a few seconds. Transfer to a griddle or pan coated with coconut oil.  Sprinkle with additional cinnamon (this step is optional). Cook bread until golden brown, about 3-4 minutes on each side. Serve warm with maple syrup and enjoy!
