3 tablespoons organic coconut flour
1 ¼ cups organic almond flour
1 tablespoon organic pumpkin pie spice
½ teaspoon aluminum free baking powder
½ teaspoon sea salt
1 organic egg
¼ cup organic raw honey or maple syrup
½ cup canned organic pumpkin puree
2 tablespoons organic coconut oil, melted
½ cup of organic cacao chocolate chips
Preheat the oven to 350°. Grease a cookie sheet with coconut oil. Whisk together almond flour, pumpkin pie spice, baking powder and salt. In a separate bowl mix egg, honey, pumpkin puree, and coconut oil. Make a well in the dry ingredients and add wet ingredients, mixing until combined, do not over mix. Fold in chocolate chips. Using a small scoop place cookies on to the cookie sheet coated. Bake for 12-17 minutes. Makes about 20 cookies.
