This recipe uses coconut sugar which a great alternative to other sweeteners because not only is it is low on the glycemic index, there is only 18 calories a teaspoon! Enjoy this granola on top of your favorite fruit smoothie, coconut ice cream or just add almond milk! You can even package it up, and give it as gifts!
2 cups organic oats
1 cup organic sliced raw almonds
1 cup organic walnuts, chopped
1 cup organic pecans, chopped
1 cup organic raw pumpkin seeds
½ cup organic flax seeds
¼ cup organic sunflower seeds
1 cup shredded organic coconut
1 cup organic raisins
¼ cup organic maple syrup
¼ cup organic coconut oil, melted on the stovetop
¼ cup organic coconut sugar
Preheat the oven to 350 degrees. In a large bowl, mix together all the dry ingredients, except the raisins. Combine the maple syrup, melted coconut oil and coconut sugar. Pour over the dry mixture and mix thoroughly. Spread granola on to a cookie sheet and bake for 15 minutes. Stir in raisins and cook for an additional 10 minutes. Let cool completely.
