Healthy No-Bake Cookies

(Use organic ingredients when possible)

1 cup peanut butter
½ cup honey
½ cup coconut oil
¼ cup raw cacao powder* (you can use baking cocoa)
1 tsp. vanilla
¼ cup shredded coconut (optional)
2-¼ cups oats

Mix first three ingredients in a small saucepan until coconut oil has melted. Remove pan from the heat and add cacao powder, vanilla, coconut and oats last. Use a melon baller or small ice cream scoop to form cookies on to an un-greased cookie sheet. Refrigerate for an hour or serve warm!

*Cacao and cocoa both come from the Cacao Tree. The cacao beans grow in football-sized pods. Cacao is the bean in its raw state and is the name being used by companies to differentiate the least processed of the beans. After the beans are cleaned, heated and processed, they are called cocoa. Nutritionally, cacao is significantly higher in antioxidants and are in excess to the same levels found in many fruits and vegetables! Once it is heated and processed, it loses much of its nutritional benefits.
