Gluten Free & Vegan Oat Bread

I spent weeks developing this recipe and I am very happy with the results. I hope you will enjoy this bread as much as I do!

2 T ground flaxseed mixed with 5 T water (allow to sit for 5 minutes and whisk together until it resembles the texture of an egg)
2 ¾ cup oats (or oat flour)
¼ cup coconut sugar
½ teaspoon salt
¾ teaspoon baking soda
½ teaspoon baking powder
¾ cup unsweetened almond milk
½ cup of applesauce

Preheat oven to 350 degrees. Using a Vitamix or high speed blender, grind oats until they resemble a fine powder. Make sure you end up with 2 ¾ cup of flour, grinding more oats if needed. Mix dry ingredients together. Combine wet ingredients in a separate bowl including flaxseed egg. Add wet ingredients to the dry and mix well. Let the mixture rest for 5 minutes. Pour batter into a greased glass bread pan lined with parchment paper. Bake for 45 minutes and let cool completely before cutting into slices. Top with homemade jam or coconut oil.
