Gluten Free Chocolate Cake


The quinoa in this cake makes it VERY moist!  It’s gonna be your new FAV! I’ve made this cake 3 times in the last week! AHHHH… so good!

2 cups organic cooked quinoa (white works best)
1/3 cup organic almond milk
4 organic eggs
½ cup melted organic coconut oil
1 cup organic coconut sugar
½ cup organic cacao powder
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon sea salt
1 teaspoon organic vanilla

Chocolate Sauce
½ cup of organic cacao wafers or organic chocolate chips
2 tablespoons organic almond milk (add more if too thick)
2 tablespoons organic almond or peanut butter
¼ cup organic raw honey
1 teaspoon organic vanilla
pinch sea salt

In a food processor add the cooked quinoa, milk, and eggs. Pulse until smooth. Slowly add the oil (to prevent it from re-solidifying). Add remaining ingredients and pulse until well combined. Pour into a 9 inch round cake pan or pie dish coated with coconut oil. Bake at 350 degrees for 40-45 minutes or until a knife comes out clean.
Melt ingredients for chocolate sauce in a small saucepan on low on the stove top. Pour over warm cake.
Serve with coconut ice cream, or coconut whipped topping and strawberries. Let the PARTEEs start!
