Pineapple ice cream is seriously amazing! Best. Ice. Cream. Ever… dairy and sugar free too! What’s not to love! This recipe is so easy to make with only three ingredients. It’s the perfect summer treat!
3 cups fresh organic pineapple, diced and frozen
1 can organic coconut milk, refrigerated for at least 4 hours (this helps give it the right consistency if you are serving immediately)
1 tablespoon organic 100% Maple syrup
Let the pineapple thaw at room temperature for 10-15 minutes. Separate the pieces at best at possible and place in a Vitamix or high speed blender. Add the remaining ingredients and blend until smooth. Serve immediately or pour into a glass bread pan, cover and freeze. Thaw for 20-30 minutes before serving and watch it disappear!
