Vegan Cinnamon & Blueberry Spelt Flour Pancakes

At our house pancakes are a staple.  A certain middle child asks for them for dinner at least once a week.  I am always experimenting with different types of flour and love the results from spelt. This recipe does not require eggs, so if you are out, no need to hit up your neighbor…

2 cups organic spelt flour
2 tablespoons aluminum free baking powder
1/8 teaspoon of sea salt
1 teaspoon organic cinnamon
2 cups organic unsweetened almond milk (I use Califia Farms)
1/2 cup organic unsweetened applesauce
2 tablespoons organic raw honey or 100% maple syrup
1/2 teaspoon organic almond extract
1 cup fresh organic blueberries

In a medium sized bowl mix the dry ingredients together.  Add the wet ingredients, including blueberries and mix until well combined.  Using a 1/4 measuring cup, pour batter on to a pan coated with coconut oil.  When bubbles appear, flip and cook until lightly browned.  Serve with maple syrup and enjoy!  Makes 10-12 pancakes.
