Black Bean Burgers

2 (15oz) cans of black beans, drained
½ cup chopped onion
½ cup chopped fresh cilantro
1 garlic clove
2 tsp soy sauce (I use Kikkoman Organic)
1 tsp celtic sea salt
½ black pepper
½ cup whole wheat bread crumbs (I use Trader Joe’s Organic bread crumbs)
2 lightly beaten eggs
avocado oil
6-8 hamburger buns, whole wheat bread or pitas
Toppings:
baby arugula
sliced tomatoes
sliced avocado

Preheat oven to 425 degrees. Pour beans in to a medium sized bowl and lightly mash using a fork or potato masher, leaving some un-mashed. Add onion, cilantro, garlic, soy sauce, salt, pepper, bread crumbs and eggs. Mix together and form into ½ inch thick patties. Depending on size and thickness, you should be able to make 6-8 burgers. Place patties on a cookie sheet coated with avocado oil (olive oil will work as well). Bake for 8 minutes, remove pan from oven, flip burgers and bake for an additional 8 more minutes. Top with arugula, sliced tomatoes, avocado or anything else you like! Serve with homemade sweet potato fries!
