Black Bean and Corn Salsa


I LOVE fresh homemade salsa… who doesn’t!  My neighbor, Melanie brought me tomatoes from her garden yesterday.  I used my friend, Amy Jacobsen’s recipe to make this salsa.  I used more lime and cilantro than this recipe calls for, and obviously you can adjust the ingredients to your taste.  Bring on the partees!

15-20 organic or fresh garden tomatoes, seeded and diced
1/2 cup organic cilantro, chopped (leaves only)
1 organic purple onion, diced
1 organic green bell pepper
1 tsp sea salt
juice of 2 organic limes
1/2 tsp garlic powder
1 can organic black beans
1 cup organic frozen corn (I used Whole Foods organic blackened corn)

Mix ingredients together until well combined.  Enjoy with your favorite organic and GMO free chips.

In other news, I have been on a Kombucha kick lately and I am learning to brew my own.  I may have killed my first SCOBY!  I forgot to cover it with cheesecloth to let air in one night, and threw the lid on without thinking!  When I get the process down I will share with you how to make it.  Kombucha has so many great health benefits, most importantly known for the probiotics which help with digestion.  I just read today that it can reverse gray hair?  I don’t have any gray hair, yet… so I can’t test this theory!  Some young soul out there will have to let me know, haha.
