Banana Bread

This recipe comes from a wonderful site called nourishmentnow.com.  The original recipe does not call for an egg, but I added one (I wanted my bread to more cake-like).  I’m warning you…you may not want to share (It’s that good!)!!!
2 cups spelt flour
2 tbsp ground flaxseed
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
½ tsp sea salt
½ cup maple syrup
½ cup coconut oil, melted
½ cup almond milk
4 very ripe mashed bananas
1 egg
½ cup chopped walnuts
½ cup vegan chocolate chips
2 glass baking bread dishes

Instructions
Heat oven to 350.  Grease your glass bread dishes with coconut oil. Combine all dry ingredients in a bowl. In another bowl combine all wet ingredients together.  Add to the dry ingredients and pour into greased glass bread dishes.  Bake for 35 – 40 minutes or until bread is golden brown and you can place a toothpick in the bread and it comes out clean.  Let the bread cool for about 15 minutes.
