My grandmother loved to bake and was famous for her chocolate chip cookies with toffee bits. I asked her once where she got her great recipe and to my surprise, she said it came off the back of the Skor bits package! Cheers to great recipes found on the back of packages! This recipe is found on Bob’s Red Mill Almond Mill/Flour.
3 cups almond flour
1 tsp baking soda
½ tsp sea salt
¼ cup organic coconut oil (melted)
¼ cup organic pure maple syrup (room temp)
1 whole organic egg
2 organic egg whites
1 tsp organic vanilla extract
1 cup organic dark cacao chips (I buy the 65% organic cacoa chips from Whole Foods)
½ cup organic sliced almonds
Preheat the oven to 375 degrees. Using a paper towel, coat a cookie sheet with coconut oil. Combine almond flour, baking soda and sea salt. Mix coconut oil and and maple syrup in a mixer or by hand until creamy but not fully incorporated, about 5 minutes. Add whole egg, egg whites and vanilla extract; mix for two minutes more. Slowly add dry ingredients to egg mixture and mix for one minute. Add cacao chips and almonds and mix until well combined. Place large rounded tablespoons onto prepared baking sheet, about one inch apart. Flatten slightly, and bake until golden brown, 15 to 20 minutes. Makes 25 cookies. Serve with almond milk!
